NIs it out of the question to stand up the server as part of testing and fake the underlying infrastructure? What you want can definitely be done, but you may also need to account for things like batching where several procedure calls may be bundled into one request
NYou could probably mount essentially a whole tRPC API inside of cy.intercept with just a catch-all glob, and through that mock things without having to worry about the request/response format
NJust some ideas, in my case I've gone the route of standing up the API for real and hosting the underlying services for testing, just because it's more realistic for an e2e suite

NMakes sense. Sometimes it’s unavoidable! You should be able to disable batching via client setup so could set that off when under test. Otherwise I think you’re on the right tracks with your original post.
Likely you could import some internal types from tRPC with a bit of reading the source, but also using superjson directly would help you format the response object probably.
It would be nice if cypress did mocking better, then you could just stub out the queries directly and save a lot of this pain
